knockoff blizzard

Growing up, my summer treats were one of two things (were all kids so routine?): Rita’s cherry italian ice with twist frozen custard or a DQ mint chip blizzard. I mostly ditched dairy because I found it to be one of the dietary factors influencing my mental health but I haven’t missed traditional ice creams because coconut milk is a truly great replacement due to it being nice and fatty. Today was the perfect day for this knockoff blizzard - it’s warm, I was watching this guy eat an ice cream cone, and I had an early lunch and was very hungry at 2pm and knew I’d need something substantial (code: protein and fat) to get me to dinner.

Knockoff Mint Chocolate Chip Blizzard

  • 1 frozen banana or banana + ice

  • 1c full fat coconut milk (I like Native Forest)

  • 1/4+ teaspoon mint extract or fresh mint

  • protein powder (I use Kelly LeVeque’s beef protein isolate powder)

  • 2 tablespoons cacao nibs (I like the texture of these, although you could use 80% or up to 100% dark chocolate chips - it will be sweet enough with the banana and protein powder so the sugar in the chocolate isn’t necessary)

Directions

  1. Blend everything except cacao nibs

  2. When smooth, add cacao nibs/chips and pulse so that there’s a nice texture left to the chocolate vs. totally obliterated

  3. Enjoy!

Alternatives/tips

  • For lower GI, you can use frozen cauliflower or zucchini in place of banana if your protein powder is “sweetened” (eg. monk fruit)
